Xylitol which is also called birch sugar, can be used just like normal sugar. An important positive feature is that xylitol does not cause tooth decay*. Also, Xylitol contains 40 % less calories compared to industrial sugar.
Xylitol was discovered already in 1890 by Nobel laureate Emil Fischer.
Xylitol is a sweetener that replaces normal sugar and can be used in the same way for the preparation of drinks, food and bakery products. It has about the same sweetening effect as sugar (1 g Xylit ≈ 1 g sugar). Xylitol by Dr. Alexander Michalzik M.D. is produced in Finland from sustainable forestry.
Normal sugar can be metabolized by bacteria especially in the mouth. These bacteria produce acids and, if they agglomerate, form plaque. Unlike Xylitol. Xylitol cannot be metabolized by bacteria. The result is increased salivation, the ph value increases and mineralisation of the teeth is promoted.
